Good Morning: Sweet Potato and Kale Hash


If you have not noticed yet, I am a big lover of sweet potatoes. They add so much flavor to any dish, are super duper easy to cook no matter what the method, and are a healthy comfort food. They have twice as much fiber as other potatoes so they keep you feeling nice and full, hence why they are fantastic for breakfast. This recipe combines crispy sweet potatoes with kale for a savory and nutritious packed start to the day.

Good Morning: Apricot & Berry Fruit Salad

Hi, gang (as my dad would say)! Sorry the postings have been non-existent lately. I had a whole plan to keep caught up while I was away and well, it fell to the wayside. As I got more and more relaxed, I decided to totally unplug. And now, after 2 weeks in Ireland, a trip down south, and a weekend at one of my favorite seaside destinations.....I am feeling refreshed and ready to open up the computer again. Good Morning: Roasted Spring Vegetable Scramble


One of my favorite things about roasted vegetables is how good they taste the next day and that you can use them as leftovers in all kinds of different ways. I could go on and on about how to reinvent them...but typically I end up using them in a breakfast or brunch dish (especially after a dinner party). Good Morning: Blueberry Chocolate Almond Smoothie


After spending almost two weeks in sunny Southern California, I have moved past the winter comfort foods and onto lighter dishes that are more spring like. OK, well - I have been making this transition since January. But now, I want nothing but Baja style tacos, avocado with every meal and smoothies - all CA staples.  To me, smoothies are like sunshine in a glass and make me happy when I have them in the morning. I'm constantly trying new ingredients and this concoction of blueberries, cacao powder, almond butter and a handful of kale has just the right amount of sweet for the morning and is loaded with anti-oxidants. The almond butter gives the smoothie a creamier texture, provides some healthy fat and protein, and helps to balance out glucose levels.  I  always suggest adding some healthy fat to a  smoothie so it's not one big fructose rush. The kale gives you some green power, and for anyone who does not like kale (i.e. my husband), they wont even know it's there. Read more for the recipe...

Good Morning: Kale, Heirloom Tomato & Goat Cheese Frittata



A frittata is the ultimate solution to a quick and easy, no-fuss breakfast, especially when you have not been to the market in a little while and you only have a few ingredients in your fridge. You can throw in your left-over vegetables and whip it up in no time flat. Or you can plan ahead and have it for a Sunday brunch with friends. The ingredients in this frittata can usually be found in our fridge and I  like to use kale in a lot of my recipes because it is loaded with nutrients, anti-oxidants and has anti-inflammatory properties.

Good Morning: Lemon Quinoa with Poached Eggs & Fresh Greens





Quinoa is by by far my absolute favorite grain. I love its' nutty flavor and wonderfully fluffy yet crunchy texture. It is not only tasty, but really good for you - full of protein and fiber. In fact, it has more protein than any other grain and is a complete protein containing all 9 of the essential amino acids. Also known as "Incas Gold" (ancient grain from South America), it helps with reducing blood pressure levels and is chalk full of heart healthy minerals.

Good Morning: Breakfast


Good morning "sunshines!"As we start the new year fresh, it is a great time to embrace and implement new healthy eating habits. I am not just talking about what you eat, but also when you eat. Breakfast which we have all heard is considered to be the most important meal of the day. It "breaks the fast" after a long night of sleep and gives you the energy to start the day right. Additionally, it may help to stabilize your blood sugar levels and metabolism throughout the day, leaving you to feel less hungry later, helping you to avoid overeating and prompting you to make healthier food choices. We feel so strongly about the importance of breakfast that we have created a dedicated series, which we have named, "Good Morning" that will showcase healthy AM recipes. It also happens to be my family's favorite meal of the day so much so, that we often eat breakfast type foods for dinner. So this is a bit of a selfish endeavour too! : ) "Good Morning" will also explore other ways we can improve our health and wellness during this glorious (often resented, yep I get it, I was not born to be a morning person) time of day.  We plan to hopefully inspire you to have many "Good Mornings!"
