Spicy Watermelon and Avocado Salsa


I tend to be a purist when it comes to watermelon  - I like slicing it up outside and sprinkling some sea salt on it. But lately I have been having fun experimenting with the juicy summer staple and it made its way into a fruit salsa. This colorful combination is both sweet and savory with a spicy kick. It's easy to throw together before friends come over. Also, perfect for fish tacos or simply as a side with grilled fish.


























Spicy Watermelon and Avocado Salsa 

Ingredients:
  • 2 cups 1/2-inch cubed seedless watermelon
  • 1 cup cubed ripe avocado
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 1/3 cup cilantro leaves, chopped
  • 1-2 small jalapeno peppers, finely minced (depending on how spicy you like it)
  • Juice of 1 lime
  • 1/4 teaspoon cayenne pepper 
  • 2 ounces blanco tequila
  • Salt and freshly ground black pepper, to taste
Instructions: 
  1. Combine all the ingredients together in a medium-sized bowl. 
  2. Toss together gently. 
  3. Let the salsa stand for 30 minutes. 
  4. Serve. 
Makes: 6 servings
