Healthy Recipes: Avocado Toast

My absolute favorite food is avocado.  Technically, a fruit, avocado makes almost every single recipe better!!  And it is fantastic for you - high in monounsaturated fat and low in saturated fat, avocado is a healthy fat alternative. So skip the butter, and go for Avocado Toast instead. We eat it often, either for breakfast, lunch and/or a snack. It fills you right up and is deliciously satisfying.

Avocado Toast

  • 1 ripe avocado
  • 2 slices whole wheat bread, toasted
  • 1 teaspoon lemon juice 
  • Dash of garlic powder 
  • Sea salt and pepper, to taste 
  1. Slice the avocado in half, remove the pit and scoop the flesh into a bowl. 
  2.  Using a fork, mash the avocado. 
  3.  Place the bread in the toaster.
  4.  Add the remaining ingredients and continue mashing/mixing. 
  5. Spread the avocado on top of the toast and sprinkle with a little more sea salt. 
  6. Add additional toppings, if you desire. Here, I added some fresh basil.
