Inspired by the
bushels of peaches at the farmer's market yesterday, I promptly went home and concocted this cocktail for Friday night happy hour. The combination of freshly picked mint and ripe peaches created just the right summer sip. This is definitely going to be in rotation all weekend long. Follow the jump for the recipe.
Minty Peach Slush
Ingredients:
1 ripe peach, pitted and sliced
1 handful mint leaves
4 ounces white rum
2 cups ice
1 tablespoon honey
1 teaspoon lemon juice
Instructions:
1. Combine all the ingredients into a blender.
2. Blend until the ice becomes slushy.
3. Pour into your glass of choice and garnish with mint and a peach slice.
4. Enjoy!
