Holiday Appetizers: Prosciutto Crostini with Cherry Jam and Goat Cheese


Happy almost Thanksgiving everyone! Have you started preparing for tomorrow yet? Or are you traveling somewhere for the holiday? Victor and I are currently in Philadelphia and we are about to head out for brunch. Then we are driving down to Maryland to spend the weekend with very close family friends in their beautiful, old farmhouse. We can't wait to get cozy with them and catch-up! While I am not in charge of the Thanksgiving dinner, I am contributing by making the appetizers and a couple of side dishes. This appetizer has become my new "go-to." I made it for a champagne tasting party recently and for our "friendsgiving." Both times, it was a hit! It is seriously easy to make so for any of you in last minute mode...this recipe is especially for you....

 
Prosciutto Crostini with Cherry Jam and Goat Cheese

 

Ingredients:

  • 1 baguette
  • Extra-virgin olive oil
  • 11/2 tablespoons garlic powder
  • 4 ounces soft goat cheese
  • 4 ounces thinly sliced prosciutto
  • Cherry Jam
Instructions:
  1. Preheat the broiler to 400°F.
  2. Thinly cut the baguette into slices.
  3. Brush the baguette slices with olive oil and sprinkle garlic powder on top.
  4. Spread goat cheese evenly on each slice.
  5. Arrange the baguette slices on a baking sheet and broil until a golden brown and crisp (about 3- 4 minutes).
  6. Set the crostini aside to cool, add a thin slice of prosciutto and a dollop of cherry jam.
Makes: 8-12 servings
